Punxsutawney Phil....and Apple Crisp

It's another blustery snow-filled day here in northern Tennessee.

 
It seems as if Punxsutawney Phil's prediction last month was spot on - 6 more weeks of winter.  We have definitely been feeling it here.  Even in the midst of all the snow, I am reminded of a quote by Hal Borland, "No winter lasts forever; no spring skips its turn".  I do know that winter will soon be left behind...by next week actually.  Our temps will soar into the 60s for the entire week!

To help us enjoy another day of winter, I prepared the Kari Lee's Apple Crisp Mix I purchased at Cracker Barrel over the weekend.  Warming up on the inside is a wonderful way to warm up on the outside!


It was simple.  Put some canned apples (the ones you would use for pie filling) in a casserole dish, mix the crisp with cold butter until crumbly, pour it over the apples and bake for 50 minutes.


The aroma of cinnamon and apples filled the entire house.  Absolutely mouth-watering.  If by chance, you want to make this little recipe even better....


Top it with whipped cream!


Delightful, sweet, aromatic....a perfect dish to enjoy while watching the kids slide down the snow-covered hill on their sleds!

    1. It was! :-) The leftovers are good re-heated in the microwave. You can't ever go wrong with a Cracker Barrel mix!
