This recipe was in the workbook of a Bible studies I participated in called Nehemiah by Kelly Minter. If you have not had the opportunity to participate in one of her Bible studies, please find a class and join. Kelly is a great teacher and is so sweet, cute and personable. The bonus is that her workbooks have awesome recipes.
This recipe combines the following ingredients....
...into a tasty dish. While it looks horrible, it truly is wonderful and is very healthy. Well, it WAS healthy until I served it with smoked sausage and chips and salsa. The chips and salsa are Kelly's serving suggestions, not mine. I was just following instructions!
Tasty Quinoa and Black Beans (click here to print)
1 teaspoon vegetable or coconut oil
1 onion, chopped
3 cloves garlic, peeled and choppedDirections:
I made a few changes (shock and gasp).
I used Roasted Garlic Quinoa and eliminated the chopped garlic. I used shallots instead of an onion, because I had shallots on hand. I reduced the amount of corn and beans because it is just the 2 of us. I also let it cook until the beans were a little soft. While I purchased the cilantro (you can see it in the photo), I totally forgot to chop it up to include in the recipe.
It did not change the taste one bit. I've prepared this recipe several times. Also, Kelly doesn't tell you how many servings and unfortunately, I can't tell you either. :-) Here are a few other quinoa recipes from the Cooking Light website.

ReplyDeleteI had never tried it until it was served in Bible study. It was so delicious. I try to make it about once a month. The garlic, onions and cilantro give the quinoa flavor, while the beans and corn provide the texture. I think your family will enjoy it. :-)
