Butter My Biscuits....

Homemade is definitely better than store-bought...sometimes.  I like my homemade pickles better than those I purchase in the store because I do have some control over the flavor...and size....and shape.

If you have been following my blog, then you know we are in the throws of packing to prepare for our upcoming move....if we close.  We have given the lender and realtor our "if it doesn't close by" date.  If it doesn't close, then we walk away from this house and stay in our rental for another year.  "But you've gone to all that trouble of packing."  Yes, I know.  And it's okay.  Even if we don't move, it has given me a chance to clear out some things that I really needed to get rid of, be a little bit better organized and, most importantly, I get the opportunity to redecorate a little....you know, a fresh perspective on what I've got going on in the house.

Now, with all of that being said, I took a break from packing.  We wanted breakfast and didn't feel like going to yet another drive-thru for our meal.  Sooooo, I decided to make some homemade biscuits.

I know you are all wondering....how could she go to all of that trouble in the middle of packing for a move?  It was no trouble and took less than 20 minutes....well, a little longer counting photo-taking time.  Besides, I desperately needed this time away from packing.  My boxes are becoming less organized...I put picture frames in with the cookware...not acceptable.

I have the hubster's grandmother's recipe for homemade biscuits.  It is a great recipe.  But there wasn't time for all of that.  Besides, I didn't have any lard (that's shortening for you modern folks) and wasn't going to the store to buy something I rarely use.   I did the pantry search and saw that I had a box of Bisquick.  Done!

For those of you who have never used Bisquick for homemade biscuits, you should definitely give it a try.  It is super easy and these biscuits taste much better than opening a can of Pillsbury Grands.

Preheat your oven to 450 degrees.  Mix 2 1/4 cups Bisquick with 2/3 cup milk and stir.  After you have a soft dough, turn it out on a Bisquick-covered surface (same as a floured surface).

Knead it around a bit and form into a round shape.  Roll it out and cut with your biscuit cutters.  If you don't have biscuit cutters, use cookie cutters or a glass or cut them with a knife to look like scones...you can do whatever you want.  There are no rules....rules are for Scrabble.

After you get the biscuits cut, place them on an ungreased cookie sheet.  You should have about 8 or 9 biscuits, depending on the size.

Bake for 8-10 minutes until golden brown.

These biscuits are wonderful!  They are light, flaky, fluffy....and you will be proud that they didn't come from a can!  The hubster likes his with syrup or honey...

....while I'm pretty boring and eat mine with jelly!

    1. Thank you Tessa! That is exactly what I told my husband...that maybe this is not where we are supposed to be. We've stopped stressing over it and if it happens, great....if it doesn't, great....we are good with it either way! :-) I like having peace, not stress. :-) Hugs!!! And have a wonderful day!

  2. Good Morning Dear Friend,
Well this has been quite an ordeal and I know that you are tired of the emotional roller coaster.
When we sold our home in May, we were completely packed up, and we got a call that the buyers had some missing paper work. We lived in our boxed up home for 10 days. Tell me how these things even happen?? Don't despair it will work out and if it is meant to be it will, if not, there is something better on the horizon.

    1. Good morning...well, now it is afternoon! Where has the day gone? :-) It seems that it is an emotional roller coaster regardless of which end you are on...buying or selling...LOL. I know that you guys are experiencing some issues with building also and that is equally as frustrating! It will all work out and we will be fine with it either way! I think staring at boxes for an extended length of time is what wears on the you most! :-) Thank you so much and have a great Monday!

  4. Good morning, Benita! I agree, if it's meant to be, then this will be your home! My husband's family being from the South love their biscuits, gravy or not, but with maple syrup, Oh wow that looks amazing! Long story short we had two inspections, because the sellers didn't fix what they were supposed too, nothing major, but they still were being so tight with their money! If I had too, I would have stayed in our rental too for another year! Crossing my fingers for you! =) hugs, Christine

    1. Thank you so much Christine! We hope it shakes out and is over in the next week..one way or the other. Thankfully, we are not having to wait on the builder or another seller...I think that would add a whole new dimension of stress...LOL And agreed on the biscuits...it is a staple with gravy, honey or syrup! Thank you again!! HUGS!!!

  5. Yum, I always use Bisquick for biscuits and shortcakes. I actually skip the rolling out part and just plop them on the pan! Still taste great. Oh, I hope you close soon!!!

    1. Bisquick just makes life so much easier when it comes to making something from “sorta” scratch…LOL. I like their pancake mix also. I like rolling them out, makes me feel like it is more homemade than what it is…LOL. When I used Grandmother Ruby’s recipe, I find that I have to keep playing with the amount of shortening, and I don’t like to see all of that going into my food…adding milk is much better! :-)

  6. I've used Bisquick for many a biscuit in my day! :) I am impressed that you rolled them...I usually cheated when the boys were growing up and constantly hungry and just made the drop ones!

  9. You definitely deserve some time away from packing, Benita. But seriously, if it had been me I would have headed straight to the spa for a pedi! At any rate, this post clears up the mystery in my mind about your Silent Sunday :) And the biscuits look delicious!

    1. Yeah, the pedicure sounds so much more fun than baking....being able to relax, while someone massages my legs and being able to sit in those wonderful massaging chairs. Welp...that problem is solved...will be making my way there this week...thanks for talking me into it! ;-) Thank you so much! :-)

  11. A hot biscuit with syrup sounds divine! I hope you don't have to back out, but this is getting ridiculous and you have to draw your line in the sand. I remember those final days of packing. You start just tossing stuff together. Normal.

    1. They were good....Bisquick is a no fail recipe, that's for sure! :-) And I apologize, I linked to your party and forgot to do a link back. I've remedied that on this post and now your link back is there.

It is ridiculous and I'm getting to the point of just throwing things in a box so that I don't have to look at them.....LOL

  12. Benita,
Oh, how many Bisquick biscuits have I made during my life? Too many to count. But, a few years ago I began buying frozen biscuits which taste pretty good to me.... especially with Alabama wild blackberry jam. You guessed it. My sister-in-law came over my last morning in Alabama with 7 jars of freshly-made blackberry jam... still warm in the jars. So, I'll take 'boring' jam any day.

    1. Oh my, how wonderful!!! Freshly made blackberry jam...my mouth is watering!!! I know that tastes divine. My MIL has used some of those biscuits in the past and she said they were really good. I've never tried them, but think I may pick up a pack when I buy groceries next! I'm so glad you had a wonderful time with your family while you were away, but am so glad you are back at your blog! :-)

    1. It truly doesn’t get any easier than this. And if you don’t want to roll them out, you can “drop” them. This mix is one of the most versatile products you will ever find. I always have some on hand because it can use it in so many things.
