Tonya's Easy Cornbread Dressing....

I don't know exactly who Tonya is, but I cannot thank her enough for this recipe!

Making dressing for Thanksgiving has forever intimidated me.  It has always turned out too dry or too mushy.  I could never find that perfect balance.

Then, I ran across Tonya's recipe on kraftfoods.com.  I was skeptical at first because it seemed too simple and easy.  Because great recipes have to be complicated, right?  WRONG!  This is a great recipe and is not complicated.

TONYA'S EASY CORNBREAD DRESSING
1 pan previously made regular cornbread (2 boxes - follow directions on box) OR, you can use Grandmother Ruby's Country Cornbread
1/2 medium sweet onion, minced or chopped
1/2 to 1 can chicken broth (adjust amount to desired moistness)
1 can cream of celery soup
Salt and pepper to taste
2 eggs, boiled and diced
Optional: chopped ham, chicken or turkey

Preheat oven to 375 degrees.  Combine crumbled cornbread, onion, cream of celery soup, salt and pepper.  If you use meat, add it at this time also.  Slowly mix in the chicken broth.  Spread the mixture into a pan and bake.  Cook until dressing is brown.  Add eggs and bake for 10 additional minutes.

Now, that's the basic recipe and as you all know, I make adjustments.  You can add chopped celery if you like the flavor and reduce the soup to 1/2 can.  You might have to use the entire can of broth if you reduce the amount of celery soup.  You can also add sage or any other spices you enjoy in your dressing.  This recipe is just a great jumping off point and if you don't want to make any changes, it's great just the way it is.

Give it a try....if it doesn't work out, just drown it in gravy...no one will know the difference! ;-)

  3. Much like the recipe I use. I add cream of chicken soup and I do use chicken and the broth from when I boiled the chicken. I like to add some melted butter because everything is better with butter. I make enough to freeze some for Christmas. Happy Thanksgiving to you and yours.

    1. Yes, the cream of chicken soup is wonderful for this recipe also. I've added it in the past and it still tastes great! And keeping the onions chunky adds that nice little crunch! LOL..yes, everything is better with butter! :-) Hope you and your family have a most wonderful Thanksgiving Lynne! Hugs!!

  7. We already had our Cdn Thanksgiving the 2nd Mon of Oct. Mother Nature planned it that way cuz soon as that is over it is pretty much winter for 6 mths on the prairies. Then winter scowl syndrome sets in and it is hard to get a drumstick in your mouth while you are scowling LOL The other thing not native to our Country is Black Friday though the big brains that jump on any and every marketing angle have started advertising sales under that banner over the last yrs. Our equivalent to this is called Boxing Day on Dec 26th a massive after Christmas blow out. Happy Thanksgiving to you and Hubster and good luck shopping if you partake in Black Friday! :)

    1. I had to get Kimberley to update me on the Canadian Thanksgiving, because I couldn't remember when it took place. Six months of winter?! WOW...but I can see that. Our northern prairie states have it about that long also. Ahhhh, the dreaded Black Friday has made it's way to another country! I do not partake and you couldn't drag me out to do any shopping. I do not like those heavy crowds and there is absolutely nothing out there that I want to fight anyone over. Even when my kids were little I refused to participate. We put up the tree and relax on Black Friday...the most hectic my day gets is deciding which stretchy pants I will be spending the day in! :-) Hugs!!
