Quinoa and Black Beans

Quinoa (pronounced kinwa) is gluten-free and a high source of fiber and protein.  I will let Wikipedia fill you in on all the details of what it is, it's classification in the plant world and how it is grown.  The only reason I'm bringing it up is that I want to share this recipe.


This recipe was in the workbook of a Bible studies I participated in called Nehemiah by Kelly Minter.  If you have not had the opportunity to participate in one of her Bible studies, please find a class and join.  Kelly is a great teacher and is so sweet, cute and personable.  The bonus is that her workbooks have awesome recipes.

This recipe combines the following ingredients....


...into a tasty dish.  While it looks horrible, it truly is wonderful and is very healthy.  Well, it WAS healthy until I served it with smoked sausage and chips and salsa.  The chips and salsa are Kelly's serving suggestions, not mine.  I was just following instructions!

Tasty Quinoa and Black Beans (click here to print)

1 teaspoon vegetable or coconut oil
1 onion, chopped
3 cloves garlic, peeled and chopped
3/4 cup uncooked Quinoa
1 1/2 cups vegetable or chicken broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 cup frozen or canned corn
2 (15 oz) cans of black beans, rinsed and drained
1/2 cup chopped fresh cilantro
salt and pepper to taste

Directions:

Prepare quinoa according to package directions.  Heat the oil in a saucepan over medium heat.  Sauté onion and garlic until lightly browned.  Mix quinoa into saucepan and cover with broth.  Season with cumin, cayenne pepper, salt and pepper.  Bring mixture to a boil.  Cover, reduce heat and simmer 20 minutes.  Stir corn into saucepan and continue to simmer about 5 minutes.  Mix in the black beans and add cilantro.  Continue to heat until beans are hot.  Serve with chips and salsa.

I made a few changes (shock and gasp).


I used Roasted Garlic Quinoa and eliminated the chopped garlic.   I used shallots instead of an onion, because I had shallots on hand.  I reduced the amount of corn and beans because it is just the 2 of us.  I also let it cook until the beans were a little soft.  While I purchased the cilantro (you can see it in the photo), I totally forgot to chop it up to include in the recipe.


It did not change the taste one bit.  I've prepared this recipe several times. Also, Kelly doesn't tell you how many servings and unfortunately, I can't tell you either.  :-)  Here are a few other quinoa recipes from the Cooking Light website.

    1. I had never tried it until it was served in Bible study. It was so delicious. I try to make it about once a month. The garlic, onions and cilantro give the quinoa flavor, while the beans and corn provide the texture. I think your family will enjoy it. :-)

  2. If you read Quinoa as the name of a Jedi Knight from Star Wars (which is what it looks and sounds like), the first three paragraphs of this blog look to be the beginning of a very interesting short story...

    I'm thinking Patton Oswalt could play the role of Quinoa.

  4. Hi Benita, and it's so easy to make and better for you than minute rice! My family loves black beans and corn, with smoked sausage, I've been looking for something higher in protein for my son. I will definitely making this for them, this week! Thank you for sharing!
